HEB Cooking Connections: 2/11/13 Basil Pesto Alfredo
Valentine's Day is around the corner, and if you want to cook a romantic dinner for two, HEB's Melissa Espino gives us a recipe perfect for the occasion.
1 lb of your choice of pasta (linguini, fettuccine, bow tie, spaghetti)
A handful of fresh baby spinach
2 – 3 tbsp of Canyon Foods Basil Pine Nut Pesto
1 cup of heavy whipping cream or half&half
½ cup of shredded Parmesan cheese
1 tablespoon of Ottavio Extra Virgin Olive Oil
·Cook pasta, then strain and chill when done.
·Add the cup of heavy whipping cream to a large skillet and bring to a simmer. In about 5 minutes it should begin to thicken.
·Once it thickens, add ½ cup of shredded Parmesan cheese and the Basil Pine Nut Pesto. Stir with a spatula until it reaches the consistency you desire.
·Fold in your cooked pasta to heat it up. Once its nice and hot serve immediately and enjoy with chicken or shrimp.
