HEB Healthy Cooking Connections: 7/16/12 Shrimp Cocktail
HEB Healthy Cooking Connections Chef Melissa Espino shows us how to prepare their Chipotle Shrimp & Avocado Cocktail.
The preparation time is about 10 minutes.
The ingredients are:
-2 lbs. med. or lg. cooked tail off shrimp
-1 bottle Texas on the Plate Chipotle Chile Ketchup
-1 1/2 cup of Clamato juice
-3 cups HEB Ready Fresh Go! Pico de Gallo (med. or hot)
-1 large cucumber, diced
-1 large avocado, cubed
-1 large grapefruit
-2 large limes
*salt & pepper to taste
1. Thaw out cooked shrimp in a strainer under warm water.
2. In a bowl, mix in all ingredients: Shrimp, Chipotle Ketchup, Pico de Gallo, and Avocado.
3. Add Clamato, lime and grapefruit juice.
4. Add salt and pepper to taste.
