HEB Healthy Cooking Connections give us a tour of Italy with their Eggplant Parmesan recipe.
Eggplant Parmesan Recipe
Ingredients:
•1 whole eggplant, sliced 1" thick
•2-3 tbsp Ottavio Private Reserve EVOO
•2 cups of Panko bread crumbs
•2 cups of fresh Parmesan cheese
•2 cups of all purpose flour
•2 cups of egg whites
•1/4 cup of Adam's Reserve Italian Bread Dipper
•1 jar of your choice of Orti Di Calabria Pasta Sauce
•2-4 slices of fresh Mozzarella Cheese
Recipe: Makes 4-6 Servings
1.Prepare bread crumb mix by combining the Panko, Parmesan cheese and bread dipper in a bowl.
2.Bread eggplant by using the three step process:
•Pat down eggplant with flour mixed with salt & pepper
•dip floured eggplant into egg white wash
•flip wet eggplant onto Panko & Parmesan cheese mixture
3.Pan fry eggplant using HEB's Ottavio Private Reserve EVOO on both sides for 2-3 minutes.
4.Top your eggplant with HEB's Orti Di Calabria sauce along with a couple of slices of cheese.
Enjoy with pasta on the side!
